Cowboy Caviar

Cowboy Caviar is a super easy, no cook recipe that is naturally gluten free.  This is the perfect, quick Fourth of July appetizer.  In addition to being a delicious dip with tortilla chips, Cowboy Caviar is also a great side dish or topping.

While the Fourth of July is a year long celebration over here, I am ready for all the apps on the boat celebrating our freedom!  This mama is all about those no cook, family friendly recipes right now.  Please don’t make me turn my oven on.  The great thing about this easy no cook Cowboy Caviar recipe is that there is no wrong way to put it together.  I will share what I do below, but there is no true rhyme or reason to measurements. Measure ingredients with your heart…or taste buds.

Cowboy Caviar is a perfect appetizer dish to prepare the day before, let it hang out in the fridge, and then stir it up and serve when it’s time.  Just be careful – the temptation to taste test until it’s gone is REAL!

Cowboy Caviar Recipe

Ingredients

1 can of corn, rinsed

1 can of black beans, rinsed

2 tomatoes, chopped

1/3 large red onion, minced

minced fresh garlic

handful of fresh cilantro, chopped fine

2-3 ripe avocados, chopped

drizzle of olive oil

dash of red wine vinegar

little splash of Italian dressing (1-2 tablespoons)

sea salt and pepper

How to Make Cowboy Caviar

Combine all the fresh ingredients in a large mixing bowl (bonus if it has a cover – less dishes!). Add the olive oil, red wine vinegar, Italian dressing, salt and pepper and toss to coat. Refrigerate until ready to serve.

If I am making Cowboy Caviar a day in advance, I first add the avocado to the mixing bowl. then the vinegar.  I find this keeps the avocado from browning quickly.  Afterwards, I add the onion (the vinegar helps tame the bite of the onion), and then the rest of the ingredients.

For the corn – whatever you have (or whatever is in season!) works. Canned, fresh, grilled, even frozen and thawed. Don’t overthink it – just get some corn in there 👌🏽

How to Serve Cowboy Caviar

  • Use as an appetizer dip with blue corn tortilla chips.
  • Top homemade nachos or tacos with Cowboy Caviar.
  • Use as a side dish or grilled chicken topping.
  • Make Loaded Queso and use this recipe as a topping.
